Our Wines
We did not fully appreciate the true geological and topographical complexity of this unique place until we started making wine here in 1984. For forty years it has been giving us highly energized wines with firm backbones, depth of character, and very distinctive personalities.
Sixteen different bottlings of estate grown Pinot noir and Chardonnay each year reflect the unfolding narrative of our three estate vineyards.

ESTATE PINOT NOIR & CHARDONNAY
Since 1984, these two wines have been the most transparent statement of Bethel Heights terroir that we produce, the sum of all its parts.
CASTEEL PINOT NOIR & CHARDONNAY
The only wines that carry our family name rather than a place name, these are the epitome of each vintage at Bethel Heights.

Æolian PINOT NOIR
Æolian explores the dynamic evolution of our new-generation Pinot noir, planted between 1994 and 2016.

JUSTICE VINEYARD PINOT NOIR and CHardonnay
Firmly structured wines enveloped in ample flesh come from this vineyard where the sandy soil of the ancient sea-floor is exposed to the surface.

Lewman Vineyard Pinot Noir
Tightly spaced vines on shallow volcanic soil yield bright yet sinewy wines with a unique synergy of savory and fruit.
THE LEGACY BLOCKS
Planted between 1977 and 1979, these are some of the last own-rooted vinifera vines surviving in
the Eola-Amity Hills. For forty years they have given us wines that are defined more by their place
than by vintage or by the hand of the winemaker. But phylloxera has finally taken its toll. 2023 was
the final vintage of the old Southeast Block. 2025 will be the final vintage of the old Flat Block.

BEYOND THE BLOCKS
What are designated vineyard blocks but arbitrary lines in the sand, drawn for the convenience of tractors? When other more ancient realities begin to assert themselves in the wines – layers of geologic and organic evolution, patterns of wind and sun – then it’s time to put something new in the bottle. 2014 was the inaugural vintage for this series of Beyond the Blocks wines.

CARE & SERVING
Tips From The Cellar About Wine STorage
STORAGE
Store your bottles horizontally, shielded from light, at temperatures below 57° F. Serve the wine around 50-53° F.
DECANTING
We make our wines intentionally to be able to lay down and age gracefully for at least a decade. If you prefer to open them while they are still young, they will benefit very much from decanting at least an hour before serving, which allows them to take on oxygen and open up, as they would do more gradually over time in the bottle.
OPENING
If your wine bottle has a waxed top, insert your cork-pull straight through the wax and into the cork, and then pull slowly but firmly. Usually the cork will pop the top of the wax on its way out.
